Leaves of Pimenta dioica are sun-dried to preserve freshness. They're frequently crushed and grinded to season food. A great addition to your jerk sauces and marinades.
The Marinade Process
Crush/Grind dried leaves into small bits and rub onto poultry/meat/seafood with other seasonings. Which enables the pimento flavor to absorb into the poultry/meat/seafood. The leaves can also be used on the grill to create a bed of leaves and place the poultry/meat on top.
